Christmas Day has come and gone and it was fabulous!! We loved spending time with our family and friends. Lots of amazing meals and family time….turkey dinner at my sister’s, halibut dinner at the in-law’s, and so much fun, drinks, and late nights at my parent’s! Thank you all so much! It was nice to finally sit and enjoy the holiday season with the people who mean the most to us!
But with that being said, the food and the drinks were non stop. That’s what the holidays are about though, right! Lots of family style meals, socialbles, late nights, cookies, snacks, card games, and lots of laughs. One thing that I am super happy with is that all my sweets are gone, well, really I left them at my parent’s house. Enjoy the sweets for breakfast dad!!!
I am looking forward to getting back on track and not having so much food and sweets on the go but with New Year’s in a couple of days, that will have to wait! In the meantime, I did find a bag of leftover cranberries in the fridge so I made these amazingly moist muffins. Somewhat healthy with coconut oil, whole wheat flour and unsweetened applesauce. So yummy and satisfied my craving for something sweet.
Whole Wheat Cranberry Apple Muffins (Makes 12 muffins)
- 1/2 cup coconut oil, room temperature
- 1 egg, room temperature
- 1/2 cup sugar
- 1 1/2 cups unsweetened applesauce
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp cinnamon
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh cranberries
- 1/2 cup walnuts, chopped (optional)
Preparation
Preheat oven to 350 degrees F and spray muffin tin with cooking spray.
In mixing bowl, mix coconut oil, egg and sugar until well mixed. Add applesauce and vanilla and mix to combine.
Add flour, cinnamon, baking soda and salt to wet ingredients. Mix until just combined. Stir in cranberries and walnuts.
Fill muffin tins 3/4 full and bake for about 15 minutes. Let cool in pan for about 5 minutes then remove and finish cooling on cooling racks.
NOTE: I chopped the cranberrries but next time I would leave them whole to get more of a cranberry pop!! Also, you could make recipe this into a loaf. Pour all ingredients into a greased bread pan and cook for about 40 minutes.
