I hope everyone had an amazing Mother’s Day weekend! I am so lucky to have my mother and my mother in law living in the same community in Newfoundland so we can visit both families! This year, we actually shared Mother’s Day supper together with both sets of parents. We are also lucky that our parents like each other 🙂 and enjoy spending an evening together reminiscing about the old days and having a few cocktails.
We started the day with a delicious brunch that included Apple Pie Biscuits with a homemade apple pie filling, pillsbury grand biscuits, and tons of cinnamon sugar topped with a yummy glaze and walnuts. Very decadent but soooo ooey gooey goooood!
We finished the day with No Bake Blueberry Éclair Bars….layers of graham wafer crackers, a pudding and cool whip filling, and a homemade blueberry jam sauce. A great make ahead dessert that is super creamy! Anything with blueberries is a winner for me! (I’ll share that recipe another day)
The day ended with a great game of cards between the mudders and the others and the others beat the mudders. Sorry mudders! 🙂
Here is the recipe for the Apple Pie Biscuits…..serve these at your next special occasion, a brunch, a birthday, or on the weekend just because! These Apple Pie Biscuits are finger licking good! 🙂
Apple Pie Biscuits (serves 8)
- 1 pkg buttermilk biscuits, like pillsbury biscuits (8 count)
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 1 TBSP ground cinnamon
- 1/8 tsp nutmeg
- 1/4 cup chopped walnuts or pecans (optional)
- Homemade apple pie filling (see recipe below) or 1 can apple pie filling (store bought)
Glaze:
- 1/2 cup icing sugar
- 2 TBSP milk or cream
Preparation:
Preheat oven to 375 degrees.
Melt butter and brush on all sides of a pie plate or cast iron skillet (10 inch).
In a small bowl, mix together the brown sugar, cinnamon and nutmeg. Set aside.
Dip each biscuit in butter, place in pie plate or skillet. Generously sprinkle top of biscuits with brown sugar mixture, turn biscuits over and generously sprinkle the other side.
Pour apple pie filling over the top of the sugared biscuits (if you have time, make the homemade apple pie filling! it is so good…way better than anything you could ever buy at the store!) Pour any remaining butter and brown sugar mixture over apple pie filling. Sprinkle with chopped nuts.
Bake for 25-30 minutes until golden and fluffy.
Mix together the ingredients for the glaze and drizzle over the top of the hot, cooked biscuits. Serve immediately! Deliciously delicious!
Homemade Apple Pie Filling
- 3 apples, peeled, cored and diced (I used Granny Smith)
- 1/3 cup granulated sugar
- 1 lemon, juiced
- 1/4 tsp salt
- 1 tsp vanilla extract
Preparation:
In a saucepan, cook apples, lemon juice, sugar and salt over medium heat, stirring occasionally until apples are tender…about 15 – 20 minutes. Remove from heat and stir in the vanilla extract. Let cool slightly and follow the recipe as above.
