I was quite skeptical of this recipe as it reminded me of tapioca
pudding which I never liked as a kid but then I was quite a picky eater way back then!! But this pudding is delicious. If you are like me, you get those cravings around 3pm and you end up eating whatever you have on hand….usually not healthy. This pudding comes together in a flash…mix it up before bed, cover, refrigerate and in the morning it is ready. Grab and go deliciousness!!!
Chia seeds are high in fiber and contain calcium, manganese, and phosphorus, and is a great source of healthy omega-3 fats. To top things off, chia seeds are a “whole grain” food, are usually grown organically, are non-GMO and naturally free of gluten.
Chia Seed Pudding
- 2 cups almond milk, unsweetened
- 3 TBSP honey
- 1 tsp vanilla extract
- 1/3 cup chia seeds
- 1/2 tsp ground cinnamon
- pinch of salt
In a medium size bowl, whisk together milk, honey, vanilla and salt. Add the chia seeds and cinnamon and whisk until combined. Cover and refrigerate overnight. Serve it plain or top it with berries, nuts, banana, or a drizzle of maple syrup. Serves 4 (1/2 cup serving)
